I remember reading that NY- and Chicago-style pizzas are the way they are because of the local resources used to make them. One of the biggest — and most overlooked — is the quality of the local water supply. Since yeasted dough is the product of a controlled bio-chemical process which requires water, anything in the water used to make it will affect the outcome.
NY-style pizza is the “best” because the dough is made with water that was pulled from polluted river, treated with chemicals, and pumped through a few miles of 100-year-old silt-filled rusty iron pipes to get to the restaurant. Sounds good, doesn’t it? [/sarcasm]
In my area, we have some pretty good pizza (I should know, I slung WAY too many pizzas in my youth). We even have NY-style pizza restaurants. And much better-quality water than NYC has. I gotta say, if our NY-style pizza is anything like “real” NY pizza, I’m not impressed; it’s mediocre at best, even without NYC’s crappy water.
I think the time for the 4th box might be close…
