Having traveled around the country and enjoyed BBQ from the Carolinas to Tennessee, to St. Louis, to Chicago and Texas, with local variants in between all I can say is Amen.
Meat, fire, smoke, spices — pulled pork to brisket to tandoori, it’s all good.
Except for Carolina style. That is abomination.
