They change the damn rules and settings so many times I have no idea. I think you can retroactively change lots of dates.
You can change the date on posts you create, but not ones that the system generates. When I find the entry for “Joined Facebook” on my timeline, I can only hide or highlight it. I can’t edit it, change the date, or anything else.

So hide the “Joined Facebook” entry and create a fake one with an altered posting date?
One of the ways you can get a date that is much older is to rename an already existing page.
I believe this is the most common method — stash away some cute kitty pages, repurpose as desired.
But understand that if it runs on a net-connected computer, it can be cracked.
And you can also edit the posts that come afterward to say something different. Just checking on a Facebook Page that could have been interpreted as a False Flag.
Facebook is easily hacked. Once you hack into a page, you can change anything. Google can be your friend, but be careful which pages you visit. Some supposed hack sites deliver malware.
