I am very happy to see that people have taken to duplicate the recipes i post and I just realized there si an ingredient I keep mentioning but I have not been helpful about: Chorizo (AKA Spanish Sausage.)

This is the brand and “model” we use:

It is made by the Spanish company Palacios in a factory they have here in Miami. They are very good and had mom’s seal of approval as someone who actually made them back in the day at home.

We buy them locally at BJ’s Wholesale Club because they carry the Sarta type which is not dry.  Supposedly stores like Fresco y Mas (a latino spin off of Winn Dixie) Winn Dixie and even WalMart carries Quijote Chorizos but more than likely you get to order them through their site and have them shipped home.

Do your research. They come in different tastes and lengths, but for flavoring like with the peas’ recipe, pretty much any model will do.

  2. Sadly, my stomach does not care for pork chorizo. Beef chorizo is fine.
    As m’Lady likes the beef version and not the pork, it’s all good.
    But I don’t see this showing up any time around here.
